Pineapple Pecan Upside-Down Cake Recipe 1/2 cup butter 1 cup brown sugar 1 (15 1/2 ounce) can pineapple slices, undrained 1/4 cup pecan halves 3 eggs, separated 1 cup granulated sugar 1 cup sifted cake flour 1 teaspoon baking powder 1/8 teaspoon salt Melt butter in a 10-inch cast iron skillet. Sprinkle evenly with brown sugar. Drain pineapple, reserving 1/3 cup juice (set juice aside). Arrange pineapple slices over brown sugar, placing a half pecan in center of each pineapple slice. Beat egg yolk until thick; add sugar, flour, baking powder, and salt. Stir in reserved pineapple juice. Beat egg whites to stiff peaks; fold in flour mixture. Spoon batter over pineapples. Bake at 375 degrees F for 30 minutes.

Cowboy Casserole Recipe Source: Submitted by Joyce, Texas A Texas favorite! 1 pound chicken, deboned Seasonings optional (garlic, salt, pepper) 1/2 package corn tortillas (Tostitos work too, but not as well) 1 can low sodium chicken broth 4 to 6 cups cheese 1 can Ro*tel tomatoes, spicy or mild or 1 1/2 cups salsa Deep casserole dish Preheat oven to 350 degrees F. Boil chicken with seasoning. I buy the rotisserie chickens that are already seasoned and cooked, and debone it. Smear a little broth in the casserole dish and lay the first layer of tortillas. Pour a little more broth, spread half the chicken, half the tomatoes, and half the cheese. Cover with a little more broth. Repeat process. Bake for about 30 minutes, until the cheese is bubbly. This goes nicely with a green salad and some iced tea! Serves: 4-6

Sweet and Sour Meat Loaf Recipe 1 (8 ounce) can tomato sauce 1/4 cup brown sugar 1/4 cup vinegar 1 teaspoon mustard 1 egg, slightly beaten 2 teaspoons Worcestershire sauce 1 1/2 teaspoons salt 1/2 teaspoon pepper 2 pounds hamburger 1 small onion, minced 1/4 cup soda cracker crumbs Blend tomato sauce, sugar, vinegar and mustard until sugar is dissolved; add egg, Worcestershire sauce, salt, pepper and meat. Knead onion and crackers with tomato sauce mixture. Divide into 2 loaves; press firmly into a shallow oblong pan. Bake at 425 degrees F for 45 minutes.

Scalloped Potatoes 6 cups raw potatoes, sliced thin 4 tablespoons flour 2 1/2 teaspoons salt 1/8 teaspoon pepper 1 onion, minced 2 1/2 cups hot milk 2 tablespoons butter Place a layer of potatoes in a buttered baking dish. Add minced onion. Sprinkle with salt, pepper and flour, then dot with butter. Repeat until all ingredients are used. Pour hot milk over potatoes and bake at 350 degrees F for 1 to 1 1/4 hours. Variations Add slices of ham in alternate layers with the potatoes. Make a white sauce with the milk, flour and butter. Melt 3/4 cup grated cheese in the sauce. Pour over potatoes.
