Meatloaf Mexicali

Meatloaf Mexicali 1 1/2 pounds lean ground beef 3/4 cup prepared tomato salsa 1 egg 12 Ritz-style crackers, coarsely     crushed (about 1/2 cup crushed) 6 ounces Cheddar cheese, divided Preheat oven to 350 degrees F. In large bowl, combine beef, salsa, egg and crackers. Grate half the cheese and add to mixture. On baking pan with sides, form ground beef mixture into 9 x 5-inch loaf. Bake for 60 to 70 minutes. Meanwhile, slice remaining cheese into triangles. During last 2 minutes of baking, place triangles on top and bake until melted. Makes 6 servings.

Meat Loaf Florentine

Meat Loaf Florentine 1 slightly beaten egg 1 1/2 cups soft bread crumbs 1 cup milk 1 (10 ounce) package frozen chopped     spinach, thawed and drained 2 tablespoons soy sauce 1/4 teaspoon bottled hot pepper sauce 2 pounds ground beef Mushroom Sauce Combine egg, bread crumbs, milk, spinach, soy sauce, hot pepper sauce and 1 1/4 teaspoons salt. Add ground beef; mix well. Pat into a 9 x 5-inch loaf pan. Bake at 350 degrees F for 1 1/2 hours. Serve with Mushroom Sauce. Mushroom Sauce 1 (3 ounce) can sliced mushrooms 2 tablespoons all-purpose flour 1 cup dairy sour cream 2 tablespoons snipped chives 1/4 teaspoon dillweed Combine undrained mushrooms and flour; add remaining ingredients. Cook and stir just until thickened. Do not boil.

Sweet and Sour Meat Loaf Recipe 1 (8 ounce) can tomato sauce 1/4 cup brown sugar 1/4 cup vinegar 1 teaspoon mustard 1 egg, slightly beaten 2 teaspoons Worcestershire sauce 1 1/2 teaspoons salt 1/2 teaspoon pepper 2 pounds hamburger 1 small onion, minced 1/4 cup soda cracker crumbs Blend tomato sauce, sugar, vinegar and mustard until sugar is dissolved; add egg, Worcestershire sauce, salt, pepper and meat. Knead onion and crackers with tomato sauce mixture. Divide into 2 loaves; press firmly into a shallow oblong pan. Bake at 425 degrees F for 45 minutes.

Pie Meat Loaf Recipe

Pie Meat Loaf Recipe 2 pounds ground beef 2 cups soft bread crumbs 2 eggs 2 teaspoons salt 1 large onion, minced 1 cup tomato catsup Combine all ingredients except 1 cup of bread crumbs. Pack into greased 9-inch pie pan. Top with remaining crumbs. Bake at 350 degrees F for 45 minutes. Cut in wedges to serve. Yields 6 to 8 servings.
