Caramel Candy Recipe 2 cups granulated sugar 2 cups whipping cream 2 cups chopped pecans 1 3/4 cups light corn syrup 1/2 cup butter Pinch of salt 1 teaspoon vanilla extract Mix first 5 ingredients together and cook slowly in heavy 4-quart boiler (or pot large enough to keep from boiling over) to firm ball stage (238 degrees F on candy thermometer). Add salt and vanilla extract. Pour into buttered 12 x 9-inch pan and let cool. This will take several hours. When cool, cut into squares and wrap in wax paper. Will keep for several weeks. Makes about 9 dozen pieces.

Sweet and Sour Tofu Recipe 1 (20 ounce) container tofu 1 (20 ounce) can pineapple chunks or tidbits 1/4 cup packed brown sugar 2 tablespoons cornstarch 1/4 cup vinegar 1 tablespoon soy sauce 1 medium onion, sliced thin 1 medium onion, sliced thin Rice or Chinese noodles Drain tofu in a colander, then weigh down tofu with something heavy. Let it sit in the sink while preparing the sauce. Combine brown sugar, cornstarch, vinegar, soy sauce and juice from the pineapple in a saucepan. Bring to a boil until thick and clear. Slice tofu into cubes and add to sauce; marinate while rice cooks or 1 hour. Slice onion and pepper into thin strips. Combine with tofu and sauce and pineapple chunks. Heat until vegetables soften, then serve over rice or Chinese noodles.

Baked Chicken Chimichangas Recipe 3 (5 ounce) cans white chicken, drained and flaked 1 (4 ounce) can chopped green chiles, drained 1 cup (4 ounces) shredded Monterey jack cheese 1/2 cup sliced green onions 8 (9-inch) flour tortillas Vegetable oil Shredded lettuce, salsa or picante sauce Sour cream Combine first 4 ingredients; set aside. Wrap tortillas in damp paper towels; microwave on HIGH for 15 seconds or until hot. Brush both sides of tortillas, one at a time, with vegetable oil (keep tortillas warm). Place a scant 1/2 cup chicken mixture and roll up securing with a wooden pick. Place filled tortillas on lightly greased baking sheet. Bake at 425 degrees F for 10 minutes. Top with remaining ingredients.

Pineapple-Lemon Chicken Recipe

Pineapple-Lemon Chicken 1 (20 ounce) can sliced pineapple 1 clove garlic, pressed 1 tablespoon cornstarch 2 teaspoons Worcestershire sauce 2 teaspoons Dijon mustard 1 teaspoon rosemary, crumbled 3 whole chicken breasts, split 1 teaspoon salt 1 small lemon, thinly sliced Drain pineapple, reserving juice. Combine reserved juice with garlic, cornstarch, Worcestershire sauce, mustard and rosemary. Sprinkle chicken with salt, then brown on both sides in a hot skillet. Arrange chicken in a shallow casserole dish. Stir sauce. Pour over chicken. Bake at 400 degrees F for 30 minutes. Arrange pineapple and lemon around chicken. Spoon sauce over all. Bake 5 minutes longer. This is delicious served over rice.

Hometown Buffet/Old Country Buffet Spinach Marie Recipe Source: Former manager 1 (10 ounce) package frozen chopped spinach 4 beaten eggs 1/4 teaspoon salt 1/8 teaspoon pepper 2 3/4 cups heavy cream 2 cups mild Cheddar cheese, shredded 1 cup fine dry bread crumbs Paprika Butter a 9-inch glass pie plate or a 9-inch square dish well. Thaw and drain spinach. Beat the eggs well and beat in the salt, pepper and cream. Stir in the spinach and cheese. Pour into dish. Top with 1/4 to 1 cup of the crumbs and sprinkle generously with paprika. Dot the top with 2 tablespoons butter. Bake at 375 degrees F for 35 to 50 minutes (start checking at 35 minutes). Don

The Ultimate Chocolate Cake Recipe A very moist and delicious cake. 2 cups unsifted flour 2/3 cup cocoa 1 1/4 teaspoons baking soda 1/4 teaspoon baking powder 1 2/3 cups granulated sugar 4 eggs 1 teaspoon vanilla extract 1 cup mayonnaise 1 1/3 cups water Preheat oven to 350 degrees F. Grease and flour bottoms of 2 (9-inch) layer cake pans. Mix first 4 ingredients, set aside. In a large bowl with mixer at high speed beat the next 3 ingredients 3 minutes or until light and fluffy. At low speed, beat in mayonnaise. Add flour mixture in 4 additions alternately with water, beginning and ending with flour. Pour into pans. Bake for 30 to 35 minutes or until cake tester inserted in center comes out clean. Cool in pans 10 minutes. Remove cakes from pans and cool completely on racks. Frost cake with your favorite frosting.
